The real secret to a delicious recipe is in the sauce. That’s the trick to eating well: pack it all into a bowl and load it with sauce. Bowl eaters – you know what I’m talking about! These Quinoa Veggie Bowls with Miso Sesame Dressing is no exception.

Funny story about this recipe. When Jess and I were chatting about what recipes to create I told her I wanted to see lots of bowls. Partially because you guys request them all the time but also because I pretty much eat every meal out of a bowl. Those of you who know about my Buddha Bowl Recipe know exactly what I’m talking about. The best meals are eaten out of bowls.

So I emphasized to Jess that maybeeee it was time to expand beyond my Buddha Sauce and try out something new. She told me she’d been working on a Miso Sesame Dressing and that it was to-die-for. Even though I trusted her already, when I tried it I knew this girl was the real deal. The Miso Sesame Dressing should really be called “crack sauce” because it is THAT good.

Luckily this recipe makes a ton of sauce (more than is needed for the bowls) which I firmly believe is the selling point of these Quinoa Veggie Bowls. Not only cause you enjoy it on the bowls, but you can also add it to salads and slaws and grains and just about anything under the sun. And that is precisely what I did.

After Jess and I spent the day cooking and shooting, C and I headed up to a friend’s place on the Russian River. Before we head out of town I like to assess the state of my fridge and see what I can bring, should freeze or can hold out until we get back. I knew immediately that the mason jar full of sauce was coming with us. I honestly had no plan of action for it other than a strong belief that it could taste great with anything. I was right.

On our way up, we stopped at TJs and I picked up the makings for a slaw. Just some shredded cabbage + carrots, edamame and we also brought some leftover cilantro and green onion. For dinner we had steak and potatoes with a side of Miso Sesame Slaw….and then we did it again for lunch…and then that night for dinner we had a salad with the dressing. Basically it was the recipe that just kept giving.

Not only did all my friends immediately ask for the recipe (sorry for making you guys wait!) but I also knew that I had a cult following recipe on my hands (adding to the league alongside my oatmeal protein energy balls, detox vegetable soup and buddha bowl). These are the recipes that blow it out of the water. The ones that you guys consistently tell me you love and make weekly. I love every recipe I post and have tried and tested them all, but some I just *know* are going to be a huge hit.

Quinoa Veggie Bowls with Miso Sesame Dressing

  • Yield: 4 servings

Ingredients

For the Bowls:

  • 1 cup quinoa
  • 2 small-medium sweet potato, chopped
  • 1 head of broccoli or 2 bunches of broccolini (can use other veggies if preferred)
  • 2 large carrots, shredded or julienned
  • for topping: radishes, green onions, cilantro

For the Miso Sesame Dressing*:

  • 6 tbsp rice wine vinegar
  • 5 tbsp sunflower butter, unsweetened
  • 3 tbsp coconut aminos
  • 3 tbsp maple syrup
  • 3 tbsp sesame oil
  • 2 tbsp white miso paste
  • 2 tbsp ginger, minced
  • 1 1/2 tsp fish sauce (omit if vegan)
  • 1 1/2 limes, juiced
  • 1 tsp cumin
  • 1/4 tsp chili flakes (or more for spicier)
  • 1/4-1/2 cup water

Instructions

  1. Preheat the oven to 400F.
  2. Chop the sweet potatoes into cubes and place on a baking sheet with the chopped broccoli.
  3. Coat veggies in olive or avocado oil and sea salt and roast for 20-25 minutes.
  4. Cook your quinoa according to the package instructions.
  5. While the vegetables are roasting and the quinoa is cooking, make the sauce.
  6. Place all the ingredients together, except for the water, in a blender and blend.
  7. Slowly add in the water until you reach your desired consistency. Add more water for a thinner sauce. The sauce will thicken in the fridge. Simply add a little water and shake the container to loosen it up again.
  8. Once your vegetables are cooked and you have prepped your other ingredients, assemble them into 4 bowls with quinoa at the base topped with roasted veggies, carrots and then sauce.
  9. Top with desired toppings and serve

Notes

*Makes more sauce than is needed for recipe but will keep for up to 1 week in the fridge.

On Episode 73 of That's So Maven, Davida is interviewing Fern Olivia of Thyroid Yoga all about how to balance your thyroid holistically and tips for anyone wanting to pursue yoga teacher training.

One of the many reasons I love running the podcast is because I get to pick the brains of people I admire and ask them questions that I know will make me a better and healthier human. Knowing that you get to eavesdrop on those conversations is just icing on the cake! Today’s episode is no exception.

To be honest, I went into today’s episode with Fern Olivia with somewhat of an expectation. I knew we’d talk about Thyroid Yoga and how to support our thyroid health, but what I got in return was so much more. As you guys know, I completed Yoga Teacher Training last spring and have begun my journey of teaching yoga. It has been a STEEP learning curve (if you think yoga teaching is easy – well I urge you to give it a try!) and one that left me with a lot of knowledge but an equal amount of questions. Fern must have picked up on this because the conversation that ensued both inspired and equipped me to be a better yoga teacher. I left our convo feeling amped up and eager to see this next chapter through.

First things first – do you eat a smoothie with a spoon or a straw? This was a very heated conversation this weekend out of which I discovered I am 100% #teamspoon and C is 100% #teamstraw. I’m questioning this whole marriage thing…just kidding! I’m an equal opportunity smoothie eater/drinker. But because it’s my blog, this sweet potato pie smoothie BOWL is what you’re getting today!

It’s not just about eating organic food or supporting organic agriculture. It’s about how we live and the legacy we will leave on this planet.

That’s why I’m dedicating today’s post to talking about Stonyfield’s latest initiative, StonyFIELDS. The number one thing I learned on my trip to Sonoma earlier in the year was how damaging it is to treat our soil with pesticides. Whether it’s for growing food or simply just keeping the grass green, the use of pesticides depletes the nutrients in our soil, including the phytochemicals that actually help them build up resistance to bugs and weeds. It also affects the bee population which then affects pollination and our food supply. I could go on but basically pesticide use isn’t good for us or the planet.

Of course, this means making sure we support and purchase organic food products, but it also means ensuring that when we tend to our own yards or any of the public land we use that we’re making sure they’re not treated with pesticides either. Think about it, you go to lay in the grass in your local park and you are breathing in, sitting on and exposing your hands to all sorts of chemicals. This is especially true of kids who go to school and naturally, play in their schoolyards without much consideration to how the grass is treated (nor should they!).

That’s what StonyFIELDS is all about – stopping the use of harmful pesticides on playing fields across the US. Whether it’s your public park, schoolyard or even your own backyard, Stonyfield is asking you to think twice about how you treat your yards as well as challenging schools and governments to think twice about what they’re treating public lands with. Sweet Potato Pie Smoothie Bowl

Change up your smoothie routine this fall with this Sweet Potato Pie Smoothie Bowl. The sweetness of sweet potato, paired with cinnamon spices makes this a breakfast you will crave but is also good for you! Don't forget the hidden veggies for an extra healthy punch.

  • Yield: 1 smoothie

Ingredients

  • 1 small sweet potato
  • 1/2 cup steamed then frozen zucchini*
  • 1 small banana, frozen
  • 1/3 cup yogurt (+ more for topping)
  • 1/2 cup unsweetened vanilla almond milk (more for a thinner consistency)
  • 1 tsp pumpkin pie spice
  • 1/4 tsp cardamom
  • fresh ginger (about the size of your fingernail)

Instructions

To cook the sweet potato:

  1. slice sweet potato in half and then steam in a steamer basket for 10 mins
  2. OR wrap in foil and place in a 350 degree oven for 1 hour.

For smoothie:

  1. place all ingredients into a blender and blend until smooth.
  2. Top with additional yogurt and pumpkin spice or toppings of choice

*Could use uncooked zucchini as well
